Fresh potatoes are fed into a washing and peeling machine to remove dirt and skin. A high-speed rotary slicer then cuts potatoes into uniform thin slices (1.2mm–2.0mm) for consistent cooking.
Slices are rinsed to remove surface starch, then blanched in hot water to inactivate enzymes, reduce sugar content, and improve final chip color and texture.
A centrifugal de-waterer removes excess moisture before slices enter a continuous frying system. Precise temperature control (170–190°C) ensures golden color, low oil absorption, and crispy texture.
A centrifugal de-oiler removes excess surface oil, then chips pass through an automatic tumbler coater where seasoning powders are applied evenly for consistent flavor.
